Breakfast Sandwiched

| Way better than the drive-thru, these sandwiches are healthy and delicious. They store beautifully in the fridge and reheat to perfection in a toaster oven when warmed gently for 5 to 10 minutes.
1 recipe Nomelet (pg.17)
6 whole-wheat English
muffins
6 vegan cheese slices
(optional)
1 recipe Breakfast
Sausage Patties (pg.140)
or vegan bacon
1. Cut out six equal slices of the Nomelet for the sandwiches and keep in a warm place.
2. In a toaster oven, toast English muffins with cheese, if using, and prepare Breakfast Sausage Patties or vegetarian bacon as directed.
3. Assemble sandwiches and serve.

No-Huevos Rancheros

| Huevos rancheros, which translates to “ranch eggs”—or more eloquently, “eggs ranch-style”—is a traditional Mexican dish served at
almuerzo
(a midmorning breakfast). I like to eat this vegan version at brunch, particularly when I'm nursing a hangover.
1 recipe Cajun Home Fries
(pg. 30)
1 recipe Tofu Scramble
(pg. 18)
1 red bell pepper, seeded
and diced
1 green bell pepper, seeded
and diced
4 to 8 whole-wheat or corn
tortillas
1 15-oz can vegetarian
refried beans
1 c salsa
1 recipe Low-Fat
Guacamole (pg. 231;
optional)
1 recipe Sour Cream
(pg. 271; optional)
1. Prepare Cajun Home Fries.
2. While fries are baking, prepare Tofu Scramble with bell peppers.
3. Once everything is cooked, place one to two tortillas on each plate and microwave 15 seconds or until very soft.
4. Spoon Tofu Scramble on one side and Cajun Home Fries on the other. Add a dollop of refried beans, salsa, and Low-Fat Guacamole or Sour Cream.
VARIATIONS
No-Huevos Divorciados
Spoon plain Tofu Scramble on each side of the tortilla, leaving room in the center. Create a wall between the Tofu Scramble using refried beans or Cajun Home Fries. Place a dollop of salsa over one side and a dollop salsa verde over the other.
No-Huevos Motuleños
Mix Tofu Scramble with 1 cup of cooked or canned black beans and

cup of cooked peas and serve over warmed tortillas with a dollop of salsa picante and a side of sliced bananas.
